About UnderSea

My photo
Seaside, Oregon, United States
Located INSIDE the lobby of the Resort at Seaside on Avenue A. We're a bit tough to find but well worth it. You'll need to walk the promenade from Broadway, head south 1 block to Avenue A, look for the Resort at Seaside under the double arches, walk up the small hill and the lobby double door entrance is on your left. We serve pastries on-site daily from scones, cinnamon rolls, quiches, and daily specials. Come enjoy our delicious selection of grilled sandwiches like our original Caspian Reuben, our yummy Sea Bagel Sandwich, to everyone's favorite, the Buoy Burrito. We also have a local selection of wine and beer. UnderSea Coffee is also home to the Convenience Cove Grocery where you can grab those forgotten toiletries or last minute grocery items. We have beautiful ocean views from our indoor poolside seating or you can cozy up next to the fireplace in the resort lobby.

S'mores please...

The recent stormy weather here on the Oregon north coast reminded us that beach bonfire season is coming to an end :-(  But no fear! We have just the remedy for your rainy day blues.

We introduce you to our newest creation: the S'mores Bar!  Crunchy Graham cracker crust with just the right amount of chocolate and a healthy layer of toasted marshmallows.  Now you can enjoy S'mores all year round :-)

Pumpkin Spice and everything nice

'Tis the season, folks. UnderSea Coffee now has Pumpkin Pie lattes and we just baked these beautiful Pumpkin Scones that are topped with a spiced brown sugar glaze. Yum!

And soup makes its triumphant return today, just in time to welcome our first autumn rain here on the coast.

See you in the lobby!

Chilly weather brings delicious foods

We here at UnderSea know that as the weather gets colder, the more you'll want to nestle up in your room. We've expanded our food selection for the fall. Come on by to pick up the Caesar Salad for two, Greek pasta salad, or the old favorite Island Mac salad. We'll be doing soups and homemade chili soon too!  See you in the lobby! :-)

Come check out the brand new Convenience Cove!  The Cove carries commonly needed items for your room like aluminium foil, milk, butter, cooking oil, ketchup, and we're adding to it every day. Don't see what you need?  Just let us know and we'll see if we get it in for you. :-)

Trifecta of deliciousness

We've wanted to add to our scone line up of Oregon mixed berry, cinnamon raisin, and lemon cream for a couple of weeks now. So last night we imagined/conjured up a brand new recipe for the shop.

Meet our Almond Joy Scone, a trifecta of deliciousness. Slivers of toasted almonds in a light coconut cream scone, all glazed with chocolate. Yum!

Success!

We here at UnderSea experiment all the time with our recipes. It's probably one of the best part of owning the shop (that and meeting new people and all the espresso we can handle).

Today's experiment is absolutely a success!  We introduce to you, the newest member of our bakery line-up, Chocolate Wave Muffins!  Chocolate cream cheese swirled in the light airy vanilla base. Yum!

Celebrating Oregon's bounty

Oregon's growing season is in full bloom! In celebration of the relatively short growing season (by the tropical standards we're used to) we made these beautiful Oregon strawberry muffins.

More new pastry!

We've been having so much fun baking our own things, we just can't stop.  Our newest pastry case member is the cinnamon raisin scones with a vanilla-rum glaze. Yum!

Baking Frenzy

We were so happy with how well the biscotti turned out that we thought to make something else today. We introduce you to....(drum roll please)....Lemon Poppy Seed Scones!

New item!

Now that we are a bit more settled into our daily routine, we've begun to make a few things ourselves.  Today's baking venture produced these lovely biscotti with Belgian chocolate shavings. Yum!

Quiche Feast!

We started doing daily quiches. After the last two weeks of quiche baking, we figured it was time for a qui-lage of images. Roll those beautiful quiche images! Today's quiche: cheesy ham tomato.

The fairest of them all

One of our owners-extraordinaire designed and constructed the most beautiful condiment station in the world.  It's made out of three different types of woods and hand-crafted.  The lovely profile you see on the counter top and shelf were traced from beach wood collected from Gearhart beach.  Those pieces of beach wood are - at this very moment - being installed on accent pieces that will tie together our sand and sea theme.

Stay tuned for the unveiling of our sign and yet more beautiful wood accents in the shop!

The Beginning is Near

We have flooring!  The floor looks amazing and we are so very happy with our choice.  The interaction between the colors and floor is exactly like we imagined.  You can Look Behind the Curtain to see the new developments or just go to the slideshow on the right sidebar.  Next step: cove base installation.

In the meantime, please participate in our latest readers' polls.  Yes, polls.  Check 'em out on our left sidebar.  Also check out the view from our shop!  We suppose you can say that we have a corner "office" with ocean view.  The beginning is near.  We will see you all very soon!

Lego my Logo

Thank you to our dear friend, graphic designer Ted Folstad, we've finalized our logo.  We also have to thank Sister E for her ideas and input on it.  UnderSea Coffee truly is a friends and family affair.

With the logo finalized we can move forward on the storefront signage.  We are having it fabricated locally and the materials should be here in about a week.  We have some great ideas for our sign and we hope it'll turn out just as amazing as we imagined it to be.  Can't wait to see it!

Look Behind the Curtain

It has begun.  We signed the lease.  We have the keys.  The contractors are ready.  The plumber has been notified.  The electrician has signed on.

Like a caterpillar weaving its cocoon, UnderSea Coffee is just beginning our physical changes.  We have some pretty fantastic plans for our interior and we are so excited to get them built, painted, and installed.  Our interior will feature custom artwork by visual artist Patrick Hubik of Birdmachinebird, custom glasswork by James M. Curtis III of Edge of Glass, and custom built pieces by one of the owner-extraordinaires.

Thanks to Sister W whose idea it was to take a daily picture of the transformation, you can now Look Behind the Curtain and follow the progress!  In the meantime, Like! us on Facebook, drop us an email and please participate in our latest poll to let us know what you like with your sandwich.

Why UnderSea?

So-n-So: So what's the name of your shop?
Us: UnderSea, sameword, Coffee.
SnS: Huh. UnderSea Coffee.
Us: Yup. We have a jellyfish theme.
SnS: Oh. So why UnderSea?

And that's how it goes.  From our Credit Union representatives to our Merchant Services rep to our contractors to our friends.  Everyone wants to know why we're called UnderSea Coffee.  It all started with a dream.....(cue orchestra)

The dream was to open a coffeeshop overlooking the ocean that has an under sea theme.  This shop would feel warm to contrast the cold climate of the Pacific Northwest.  People would congregate to chat, share a drink, and keep their toes warm next to the jellyfish aquarium all to the soothing sound of the nearby surf crashing into the sand.

We have to credit Sister E with sharing with us her dream.  Sister E isn't able to be a part of this shop right now but we are going to make her dream come true and we going to do it justice.  We're keeping the jellyfish.  And the warm ambiance to shake off the cold PNW weather.  We've got ocean view that's earshot of the ocean.

We are UnderSea Coffee.

The Waiting Game

The lease is in the mail.  We are (not so) patiently waiting to sign the paperwork that will be the gunshot needed on our race to open in time for the 2011 summer season here in Seaside.  Feels like we have been on the starting blocks for months and just need to hear that gunshot.

In  other news:  We opened our credit union account and signed our very first expense check to get ourselves a P.O. Box.  Looking more and more like Geppetto is making this Pinnochio into a real boy soon.  (fingers & toes crossed).

In the meantime, participate in our reader polls!
